Quick pizza yellow dates, stracciatella and anchovies

“When you don’t have time or much desire to get your hands in the dough and wait for long rising times, quick pizza, that is, made with instant baking powder and not brewer’s yeast, is a great way to satisfy the craving with minimal effort.” This is the new Azzurra Sprinkles Dress recipe made for the mill with our Biologico extra virgin olive oil.

Obviously the result will not be the same as the classic one, but you will get a dough that is still tasty, slightly crispy outside and soft inside. Plus, do you want to put the convenience of being able to have a good pizza ready in minutes? Fantastic!
For the topping of course you can indulge according to your taste, this time I chose the sweetest yellow dates combined with stracciatella and anchovies. Goodness.


Ingredients for two round pizzas of about 28 cm.


  • 300 g 00 flour
  • 100 g semolina flour
  • 1 sachet of instant yeast ( not vanilla)
  • 220 ml water
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar


  • 1 tin of yellow cherry tomatoes
  • 250 g burrata stracciatella cheese
  • anchovies in oil to taste
  • a few fresh yellow cherry tomatoes
  • extra-virgin olive oil
  • basil


Combine 00 flour, semolina, yeast and sugar.
Add water, oil and salt. Knead until smooth and homogeneous.
Divide the dough in two, roll out each portion with a rolling pin and lay them in two 28-cm round molds greased with oil.
Season the pizzas with jarred yellow dates, oil, and salt.
Bake at 240 degrees ventilated until golden brown, about 15 minutes.
Remove the pizzas from the oven and finish with the fresh dates, stracciatella, and anchovies. Serve immediately.
