A rare and delicate honey harvested exclusively from wild blooms on the Gargano. Our mild, sunny climate with mostly calcareous soil is ideal for the wild growth of rosemary, and in early spring, at the most intense time of flowering, rosemary honey is produced. The rarity of rosemary honey lies precisely in the very short flowering time of rosemary. Bees are attracted to rosemary’s blue flowers, which transform its nectar into a delicate honey with delicious floral notes. Its scent is delicate but aromatic with some floral tips, and thanks to this not-too-sweet flavor, it goes well with savory dishes but also with herbal teas and toast.
