PREPARATION
Clean the red mullet by gently scaling them, removing the guts but leaving the head and backbone intact. Wash them well and pat them dry with paper towels. Lightly flour the red mullet, shaking off any excess flour.
Fry them in hot extra virgin olive oil until golden and crispy, then place them on paper towels to remove excess oil and season with salt. In a clean pan, heat a drizzle of oil and sauté the crushed garlic cloves.
When the garlic is golden, add the capers and oregano. Pour in the vinegar, let it evaporate for about a minute over high heat, then reduce the heat and add the fried red mullet. Let them flavor for a couple of minutes, turning them gently to prevent them from breaking.
Serve drizzled with a thread of orange-flavored extra virgin olive oil.
