Soft lemon and pine nut cookies

"Delicious, large, very soft, with yogurt and extra virgin olive oil in the dough. I flavored them with plenty of lemon zest and topped them with pine nuts which, combined with citrus fruits, I always love."

For this new recipe, Azzurra Sprinkles Dress used our lemon-flavored extra virgin olive oil to give an even more intense aroma and flavor.

Recipe

Ingredients for about 15 large cookies

  • 2 eggs
  • 100 ml of lemon-flavored extra virgin olive oil
  • 120 g sugar
  • 100 g whole plain yogurt
  • Zest and juice of 1 large lemon
  • 350 g all-purpose flour
  • 1/2 packet baking powder
  • Salt
  • 30 g pine nuts

PREPARATION:

  1. Lightly beat the eggs with the sugar, add the oil and yogurt, the lemon juice and zest, and a pinch of salt.
  2. Also add the flour sifted with the baking powder.
  3. Using a spoon, form dollops of dough on a baking sheet lined with parchment paper.
  4. Distribute the pine nuts over the cookies.
  5. Bake at 180 degrees for about 20 minutes, until lightly golden. Let cool and decorate with powdered sugar.Some advice:The cookies can be stored under a glass cloche or in a tin box for 3/4 days.
