For this new recipe, Azzurra Sprinkles Dress used our lemon-flavored extra virgin olive oil to give an even more intense aroma and flavor.
Recipe
Ingredients for about 15 large cookies
- 2 eggs
- 100 ml of lemon-flavored extra virgin olive oil
- 120 g sugar
- 100 g whole plain yogurt
- Zest and juice of 1 large lemon
- 350 g all-purpose flour
- 1/2 packet baking powder
- Salt
- 30 g pine nuts
PREPARATION:
- Lightly beat the eggs with the sugar, add the oil and yogurt, the lemon juice and zest, and a pinch of salt.
- Also add the flour sifted with the baking powder.
- Using a spoon, form dollops of dough on a baking sheet lined with parchment paper.
- Distribute the pine nuts over the cookies.
- Bake at 180 degrees for about 20 minutes, until lightly golden. Let cool and decorate with powdered sugar.Some advice:The cookies can be stored under a glass cloche or in a tin box for 3/4 days.
