The "Dita degli Apostoli" (Apostles' Fingers) are a traditional Apulian dessert that tells the story of our land through authentic flavors and ancient traditions. This traditional Apulian recipe evolves with the use of our lemon-flavored oil, produced using ancient infusion techniques that preserve all the aroma of the citrus fruits from our land, Gargano. INGREDIENTS
125 g '00' flour
250 ml milk
95 g egg whites
30 ml extra virgin olive oil flavored with lemon from Oleificio Fratelli Vieste
PREPARATION:
1- Combine egg whites, milk, and lemon-flavored oil.
2- Add the sifted flour and beat well with a whisk.
3- Pour half a ladle of batter into a lightly greased and hot pan, 10/12 cm in diameter, rotating it slightly to distribute the batter evenly. As soon as the bottom is cooked, flip the crepe and continue cooking. Proceed in this way with the rest of the mixture.
4- For the filling: work the ricotta with sugar and add the chocolate, broken into flakes.
5- Fill each crepe with the filling and roll it up.
6- Arrange the Apostles' fingers on a serving dish and serve immediately with powdered sugar.
