Azzurra made this delicious orange cake using our orange-flavored extra virgin olive oil and our delicious orange marmalade for a sweet recipe. The cake is soft and incredibly fragrant, smelling of Gargano and cuddles. For the mold, you can also use a regular 20 cm one, then cut the cake in half and fill it with marmalade.
Ingredients
- 3 eggs
- 120 g sugar
- 150 ml orange-flavored extra virgin olive oil
- 60 ml orange juice
- grated zest of one orange
- 150 g all-purpose flour
- 1/2 packet baking powder
- 50 g almond flour
- salt
- orange marmalade
PREPARATION:
- Beat the eggs with the sugar for a long time until light and fluffy.
- Gradually add the oil, then the orange juice, grated zest, and a pinch of salt.
- Add the sifted flour with the baking powder and almond flour, mixing gently with a spatula.
- Pour into a buttered and floured 20 cm pan. If you have a mold like mine, the amount is a bit excessive.
- Bake at 180 degrees static for about 35/40 minutes. Always do the toothpick test. Let cool completely. It is very soft, so quite delicate, be careful when handling it.
- Fill with orange marmalade and decorate with an orange rose.
Some advice:
- The cake can be stored under a cake dome for 2/3 days.
- all ingredients must be at room temperature.
