Fluffy orange and extra virgin olive oil cake

Azzurra made this delicious orange cake using our orange-flavored extra virgin olive oil and our delicious orange marmalade for a sweet recipe. The cake is soft and incredibly fragrant, smelling of Gargano and cuddles. For the mold, you can also use a regular 20 cm one, then cut the cake in half and fill it with marmalade.

Ingredients

  • 3 eggs
  • 120 g sugar
  • 150 ml orange-flavored extra virgin olive oil
  • 60 ml orange juice
  • grated zest of one orange
  • 150 g all-purpose flour
  • 1/2 packet baking powder
  • 50 g almond flour
  • salt
  • orange marmalade

PREPARATION:

  1. Beat the eggs with the sugar for a long time until light and fluffy.
  2. Gradually add the oil, then the orange juice, grated zest, and a pinch of salt.
  3. Add the sifted flour with the baking powder and almond flour, mixing gently with a spatula.
  4. Pour into a buttered and floured 20 cm pan. If you have a mold like mine, the amount is a bit excessive.
  5. Bake at 180 degrees static for about 35/40 minutes. Always do the toothpick test. Let cool completely. It is very soft, so quite delicate, be careful when handling it.
  6. Fill with orange marmalade and decorate with an orange rose.

Some advice:

  • The cake can be stored under a cake dome for 2/3 days.
  • all ingredients must be at room temperature.
